Maduro stuffed with rice and beans in airfryer

Ingredients:

  • 12 frozen ripe ones
  • 1 cup of cooked rice
  • 1/2 cup cooked black beans
  • 1/4 cup chopped onion
  • 1/4 cup chopped red pepper
  • 1 clove of garlic, minced
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste
  • Vegetable oil spray

Steps:

  1. Preheat the air fryer to 375°F (190°C).
  2. Defrost the ripe ones and cut them into 1/2-inch-thick slices.
  3. In a medium bowl, mix together the cooked rice, black beans, onion, red pepper, garlic, cumin, salt and pepper.
  4. Take each slice of ripe and cut a small pocket in the center, carefully removing the pulp with a spoon. Fill each bag with the rice and bean mixture.
  5. Spray the stuffed anchovies with vegetable oil spray and place in the air fryer basket.
  6. Cook for 12-15 minutes, until the sweet potatoes are golden brown and the filling is hot. Serve hot.
