Tostones with guacamole and shrimp
Ingredients:
- 12 frozen tostones
- 1 cup cooked and peeled shrimp
- 2 ripe avocados
- 1/4 cup finely chopped red onion
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh cilantro
- Salt and pepper to taste
Steps:
- Preheat oven to 425°F (220°C).
- Place the tostones on a baking sheet and bake for 8-10 minutes or until golden and crispy.
- Meanwhile, in a small bowl, mix together the shrimp, avocado, red onion, lime juice, cilantro, salt, and pepper.
- Once the tostones are ready, top each one with a spoonful of shrimp guacamole. Serve immediately.
