Tostones with guacamole and shrimp

Ingredients:

  • 12 frozen tostones
  • 1 cup cooked and peeled shrimp
  • 2 ripe avocados
  • 1/4 cup finely chopped red onion
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh cilantro
  • Salt and pepper to taste

Steps:

  1. Preheat oven to 425°F (220°C).
  2. Place the tostones on a baking sheet and bake for 8-10 minutes or until golden and crispy.
  3. Meanwhile, in a small bowl, mix together the shrimp, avocado, red onion, lime juice, cilantro, salt, and pepper.
  4. Once the tostones are ready, top each one with a spoonful of shrimp guacamole. Serve immediately.
