Maduro stuffed with rice and beans in airfryer
Ingredients:
- 12 frozen ripe ones
- 1 cup of cooked rice
- 1/2 cup cooked black beans
- 1/4 cup chopped onion
- 1/4 cup chopped red pepper
- 1 clove of garlic, minced
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
- Vegetable oil spray
Steps:
- Preheat the air fryer to 375°F (190°C).
- Defrost the ripe ones and cut them into 1/2-inch-thick slices.
- In a medium bowl, mix together the cooked rice, black beans, onion, red pepper, garlic, cumin, salt and pepper.
- Take each slice of ripe and cut a small pocket in the center, carefully removing the pulp with a spoon. Fill each bag with the rice and bean mixture.
- Spray the stuffed anchovies with vegetable oil spray and place in the air fryer basket.
- Cook for 12-15 minutes, until the sweet potatoes are golden brown and the filling is hot. Serve hot.
